About:72-Hour Visa-Free Transit

Would the 72 hours free transit apply to me if I stop in Hong Kong before I go to Shanghai?

I am the holder of the Italian passport and I'd like to know if it'd be possible for me to travel from Thailand to Hong Kong, Hong Kong to Shanghai, and Shanghai back to Thailand without any visas at all?
