Kerrie, the documents required for you to submit are your passport, a photocopy of its photo page, a filled application form affxed with your recently taken color bare-headed photo, the original and photocopy of your Dubai residence permit, and round-trip tickets and hotel reservations.

As an Australian passport holder, you are not required to hold HK entry permit if you don't plan to stay for more than 90 days.
