About:72-Hour Visa-Free Transit FAQ

More than 72 hours. Still eligible?

I arrive in Guangzhou from Hong Kong at 8:00, Saturday May 9th. I depart Guangzhou for Bangkok at 18:35, Tuesday May 12th. This is technically MORE than 72 hours, but it is my understanding that the countdown begins at midnight, 00:00 on Sunday May 10th, which is LESS than 72hrs from my departure. Am I eligible?

Yes, your understanding is right and you are eligible. The 72 hours start from the midnight after your arrival in Guangzhou, that is to say, you should leave before 23:59 of May 12th.
