We are going on a cruise followed by a tour of China, how do I work out which visa to apply for?

We are Australian & our trip has a stopover in Hong Kong then next day at Xiamen then a full day at sea before leaving the ship in Shanghai for our tour. I don't know if we need a single double or muti entry L type?
