Train trip from Vietnam to Russia via Beijing.

Hello,

I am French and my partner German.
We are planning to take a train from Vietnam to Russian with a stop over of fews days in Beijing.
I saw that Hanoi doesn't deliver Chinese VISA so we wish to get it from Cambodia.
Is it possible ?
Do I have to book the train first to prove my itinerary ?
