My stop over time is 6 hours, will I be able to obtain visa to leave airport for 2 hours to look around and subsequently have passport stamped as having visited China?

You can apply for a stay permit stamp to leave the airport with your passport and the onward ticket to NZ. The entry permit stamp is stamped on your passport.
