For your seven days, you can spend most time in HK and one or two days in Macau for sightseeing. Anyway, here is my general suggestion for your trip:
Day 1: Ocean Park - the peak
Day 2: Tsim Sha Tsui - Disneyland Reosrt
Day 3: Ngong Ping 360 and Tai O Fishing Village
Day 4: Wong Tai Sin Temple - Kowloon Park - Causeway Bay - Lan Kwai Fong
Day 5-6: Macao for the Fisherman Wharf, Senado Square, the Ruins of St. Pauls, A-ma Tmeple, Macau Tower, Grand Prix Museum, Venetian and City of Dreams
Day 7: Mongkok area

Hi, to tour Shenzhen for a day, you need to hold a visa, which should be applied in advance. You can spend there on the fifth day. The Window of the World, Splendid China and Folk Cultural Village, and Dongmen Pedestrian are recommended attractions. After that, take a ferry from Shekou Port to Macau for a visit directly.

It is best to apply for that in your country. Prepare your passport, a Visa Application Form, a recent passport-size color photo with white background stuck on the application form and documents showing the itinerary including round trip air ticket booking record and proof of hotel reservation. For the last document, it is ok to show your relative things in HK or Macau. After all, you just wanna stay for a day in Shenzhen.
