About:Chinese Greetings

How do I greet Chinese restaurant owner I hold in high esteem where I have eaten for several decades

J, if you have eaten there for decades, I think you two are very familiar with each other. There is no need to be very polite to your friends you are familiar with. The more politer you are, the uneasier he feels.

James- The point is to show them respect by going out of my way to research and learn to properly greet them in their native language. j

I think you can try "his last name + lǎo bǎn“. lǎo bǎn can mean owner or boss. Of course as Cathy explained above, since you are good acquaintance already, you can address him in any way you both feel comfortable. lǎo bǎn is one way to recognize his status as the boss of the restaurant. It is respect with humor and care.
