Ron, you needn't worry about it. You can find Bank of China branches in mainland China to exchange CNY for USD. In HK, there are Bank of China branches too. But it is also ok to exchange local currency to USD at other banks.2

My suggestion is to bring a credit or debit card and use it in the ATM. The fees and conversion rates for cash in China at the banks is a rip off.3
