How to check stays of application of visa?

I dropped off an application one week ago. The office asked me to wait for telephone call, but did not give me any expected timeline. How shall I ask for status? If it will take much longer, I cannot visit China due to work schedule. Is there any way to cancel the application and get my passport back? Do I still need to pay for fee?
