About:72-Hour Visa-Free Transit

Taipei-Shanghai-Hong Kong, RT, with a stopover in Shanghai

Can I stopover in Shanghai on this flight route, staying in Shanghai for less than 72 hours?

You mean you will fly from Taipei to Shanghai and then to Hong Kong and stay no more than 72-hour in Shanghai?
If so, you can enjoy the 72-hour free transit policy, according to the rules.
