About:Hong Kong MTR Tickets & Fares

In an Airport Express travel card when does the 3 consecutive days start?

I am arriving in Hong Kong on 2 December 2014 and leaving on 5 December. I wish to travel to Kowloon in the Airport Express on the 2 December using an Airport Express Travel Card. Then I wish to start my 3 consecutive days on 3 December. Is that acceptable?

Yes, of course. The 3 days unlimited travel on MTR is started to be counted since the first use. However, you can choose whenever you use the travel on Airport Express.
