How long will you stay in Guangzhou?
If you stay within 24 hours, you do not need it. You just apply for a stay permit in CAN and then go to transfer a train to HK.
If you stay longer, you may need to get a transit type for transfering.

My stay in Guangzhou will be less than 24 hours. When you say "apply" for a stay permit, is that something that needs to be done in advance, or can I simply receive the permit when I arrive at immigration in Guangzhou? Will I need to show proof of departure (such as a train ticket to HK)?
Also, I have read reports of difficulty at CAN in particular with receiving the stay permit - is this still a potential problem?

You can simply get one at the immigration in Guangzhou airport.
According to my experience, it is not very difficult to get a stay permit in CAN if you have your passport and the proof of your departure. But if you really worry about it, you can apply for a transit one in advance to make sure.
