About:International Trains from/to China

Beijing - Ulaabaatar - Moscow K3

We would like to travel from Beijing via the K3 route however we would like to stop in Mongolia for up to one month as per our visa entitlements. Is it possible to book this route and set dates for departure in ulaanbaatar?

no, it's impossible.
if you want to stay in Mongolia for one month, then you need to buy the ticket from Beijing to Ulan Baatar, and then buy another ticket from Ulan Baatar to Moscow.
