Reached Pudong airport at 1am, what transport should take to Shanghai Renmin Square East Huaihai Rd?

You can take the airport shuttle bus Night Line to Zhejiang Middle Road (People's Square, Yan'an Road) Station and then change a taxi to your hotel.

Or if you think transfer is confused, you can take a taxi to your hotel directly from the airport.

As I know, the fare shall reach almost 200RMB with a direct taxi!
