The CRH Trains all leave from Hongqiao Railway Station. After 18:00, there is only one CRH train at around 18:07, so I do not think you can catch this train.
If you really want to enjoy the CRH Train, you need to stay in SH for a night and take a bullet train for Jinan on the next morning.
If you do not focus on the bullet trains, you can try to take an overnight train to Jinan in about 13 hours. The last train K1182/K1183 leave SH South Railway Station at 21:47. You can take the airport shuttle bus line 7 to reach the south railway station directly. If you can book the train ticket in advance, I think you can catch this train on time.
