I am afraid that most sales people can't communicate with you in English very well. If you join a group tour arranged by the tour agency, you can ask help from the agency or tour guide. Or you might ask the hotel staff to help you.

I arrived to China some weeks ago at Shanghai's Airport, and there is a lot of sales stands of cellphone companies, I bought a sim card there and the lady who sold it to me speaks fluent english, so I guess that most of the sales people can speak english.

That's really good news. But you won't be lucky if you buy from the telecom branches in the city. Fewer employees there can speak English.
