getting on a train at a different time then the booked train

I will be taking a train from the Shenzhen North Railway Station to the Changsha South Railway Station. I want to book this train but I am not sure what time I will be arriving at the North Railway Station since my starting point is Hong Kong. Let's say I book a train at 11 AM but I arrive at 9 AM. Can I get on an earlier train?
