Is there daily rail service from Nanning to Hanoi in Viet Nam?

Yes, the overnight train is available every day and it is very convenient.

I only found trains leaving Mo and Fri; how and where can I book daily train rides?

It runs everyday. You can book on this website, the international trip section. But for this international trip, there is no e ticket, only paper ticket and thus it need to be delivered to your hotel etc.
