do i need a single or double entry visa for China?

I am staying in singapore 2 nights then joining a cruise for 8 nights visiting vietnam then xiamen then overnight onboard in hongkong then 2 night stay in a hotel in shaghai.

You should apply for a double entry type for your visit to Xiamen and Shanghai.
