Places of interest: Disneyland Resort, Ngong Ping 360/Giant Buddha, Tai O Fishing Village, Ocean Park, The peak/Madame Tussauds and Victoria Bay, Aberbeen, Avenue of Stars, Kowloon Park, Sky 100 and others.
For shopping, I suggest you go to Tsim Sha Tsui, Mongkok or Causeway Bay areas as well as stanley market.0
