can you change New Zealand Dollars to China Yean at most international hotels in Beijing while we are on tour

As I know, although currency exchange is available in some international hotels, they mostly provide the exchange from USD to Chinese Yuan. Therefore, you may have to try to exchange at the airport, whose consultation hotline is 010-96158. If it doesn't work either, I suggest you exchange New Zealand Dollars into USD in your country and then it will be very easy to exchange USD to Chinese Yuan.
