GUANGZHOU - is there a day city tour suitable for a 1 day transit visit?

Yes, but it is best to travel on your own instead of joining a trip. You can go to enjoy the Pearl River Cruise near Haizhu Plaza and local pedestrians at Shangxiajiulu or Beijing Road. If you are interested in, Yuexiu Park deserves a visit.

Yes. As you are an Australian passport holder, ask your airline for a transit permit, with which you would be allowed to get out of the airport visa free.
