Do I need a visa? As I got ethiopian passport and travel from Australia?

Yes, you need to apply one from the CVASC branches in Australia before you go to HK except you hold diplomatic or official passport.1

What's official passport, I am permanent resdent to Australia and I have got Ethiopian passport, so how long it takes for the visa prosess?

It depends, but if your application will need to be sent to HK for approval, then it takes about one month.0
