If my wife got a uk passport (she has indefinite leave to remain visa currently) but travelled to China to visit friends and relatives could she use her Chinese passport with the visa and only use the UK passport when we travel to Europe or USA etc. i.e. have 2 passports but only take one or the other when travelling.

I think it is ok if her Chinese passport is still valid. But for passport renewal, her residence status in the UK is required. That is to say she can not renew her Chinese passoprt if she can not provide documents showing that she did not join other nationality as China does not admit dual citizenship.

when applying for a UK passport she should have surrendered her Chinese passport or at least declared it
