Is it easy to get trains from Beijing to Shanghai and onto Hong Kong?

I'm just wondering whether you are able to purchase a multi-trip ticket for the trains or if each journey has to be bought seperately? Also once arriving at Beijing airport, is it easy to get central districts to get to your hostel?

There are so many different ways to travel and also a lot that I'm not able to understand with travel!
