Please Help! (Jane) with my HK trip

Hi, I am going HK for a 6d5n trip with another friend, and am staying at Silka Seaview Hotel in Yau Ma Tei Area. Within these days, I will travel to these stations: Tung Chung, Disneyland Resort, Lai Chi Kok, East Tsim Sha Tsui, Hung Hom, Mong Kok, Sheung Wan and Lo Wu.

1. May I know which is the best way to travel from Airport to Hotel?
2. Should I buy an Octopus Card or Airport Express Card?
