how do i go to hotel ibis central and sheung wan from HKIA? can i use the airport shuttle service?

No direct shuttle bus can take you to reach your hotel directly.
It is suggested to take the shuttle bus E11 to reach Macau Ferry, Connaught Road Central and then change to take a taxi to reach your hotel directly.
Or you can take the airport express to reach HK station. There you can walk to reach Central Station to take the Island Line to reach Sheung Wan Station. Get out of the station, you can walk in about 7 minutes to reach your hotel.0
