Third country regulation incl. Hongkong?

Hi, I planned a trip from China to Vietnam (10 days), then a 2 days stopover in Hong Kong and back to Shanghai Pudong, which is the airport of origin.
As it seems to me, if I enter China via Pudong and show them the valid return tickets to Germany in the required time, I’ll get that 72hrs visa rigth at the airport, am I right?

If yes, which airline do I have to inform, the one taking me back from HKG to PVG or the one taking me to Germany?

Thanks a lot

You should inform the airline which will take you from HKG to PVG in advance.
