About:240-hour Visa-free Transit in Shanghai, Zhejiang, and Jiangsu

A - B - C - A (incl. layover in B)

Trip itinerary: Hongkong - Shanghai - Seoul - Hong kong (incl. layover Shanghai). Would it be possible to get the visa on arrival for the first stop in Shanghai and when I fly back to HK just stay inside the airport (6h layover)? Thanks for the help.

There is no visa on arrival at Shanghai. But if your passport is from one of the 53 qualifying countries and your flights are non-stop you route is compliant for 144hr or 24hr transit without visa (depending on the length of time you're in Shanghai).
