I am visiting China in Dec 2013 and leave the USA on Dec 3 arrive in Beijing on Dec 4. I then leave Beijing for Hong Kong on Dec 7 and I board a cruise ship which sails Dec 9 from Hong Kong.

You need to apply for a visa in advance for this visit. If the cruise will not call any port within mainland China, a single entry is enough.
