Requirements to stay 6-7 weeks in China

I want to spend 6 to 7 weeks in China.
I can apply for a multiple-entry visa from Australia, valid up to 6 months, however I can only stay in China for 30 days at a time.
Does a visit to Hong Kong count as leaving China, and would this satisfy requirements? Otherwise, would I need to go further afield such as Vietnam?

Hi, leaving for HK or Macau counts an exit on your visa. It is ok to visit Vietnam as well.
