How do I go about receiving cell phone service on an Apple iPhone while in China? Please advise.

I would like to know how to receive cellphone service while in China, as I'll need to make both local and long distance calls to Canada. I understand from Apple that there are iPhones in China, but they were unable to advise as to service providers.
