About:Beijing Capital Airport T3

I am flying air china from munich to sydney via Beijing

Will my luggage be booked through or will I have to pick up and check it in again. I have an 8 hour layover.

If you keep the connecting boarding pass, it is not necessary to recheck in there and your luggage can be picked up at the final destination.
