About:Hong Kong Airport Express

I am scheduled on a Korean Airlines flight out of Hong Kong that departs at 12:30am.

Is it possible to check my bags at the airport express station in Hong Kong Island at 11am on Sep 05?

I'm afraid it is not available. Your airline is not among the airlines whose passengers can have the in-town free check0in sevice at the Express Rail stations.
