I will be travelling to Vancouver and i Would like to renew my Hong Kong Passport at the Chinese Embassy there. Would this be possible?

Yes, you can submit your application of HKSAR passport renewal to the Chinese consulate in Vancouver is you reside in its consular district. And you must do it in person.
