Can I get off the Airport Express at Tung Chung (to watch the Big Buddha) and then afterwards on the train again to travel to HK Central with a Single Journey or Same Day Return Ticket?

No, you cannot do that. The airport express does not stop at Tung Chung Station. If you want to see the Buddha first, you can take the airport shuttle bus S1 to reach the Tung Chung Station. Then from Tung Chung Station, you can take the Tung Chung Line to reach HK Station. Then you can walk to reach Central.
