Wow, it is so romantic. If you don't mind, I suggest you add Macau and Shenzhen to your trip as well. Then here is my geneal suggestion:
D1: Lantau Island/Giant Buddha in the morning. Then you can spend the rest time of the day at Disneyland Resort.
D2: Ocean Park is recommended to you. After that, you can go to Victoria Peak to have a view. There you can also visit the Peak Tower and Madame Tussaud's. At night, go to the Victoria Bay to enjoy the Symphony of Lights.
D3: Go to Macau to have fund at Venetian Resort, Fisherman Wharf, Macau Tower, Ruins of St. Paul, and Senado Square. Local New Yaohan also deserves a visit. At night, go back to HK. Ferries are most convenient transportation.
D4: Take East Rail line to Shenzhen, where the Window of the World, Splendid China and Village of Folk Arts can be visited. Then at Dongmen Pedestrian, you canwell enjoy yourself.
D5: It is suggested to spend this day at OCT east or Dameisha Resort. It is most suitable for lovers. Go back to HK at night and you may go Lan Kwai Fong for fun.
D6: Sky 100 near Kowloon Station cannot be missed. Then you can go to Tsim Sha Tsui to feel the Avenue of Stars and nearby China Harbor City is suggested. At night, go to Temple Street Night Market to have some local snacks.
D7: This can be a shopping day, at Tsim Sha Tsui, Mong Kok, or Causeway Bay. Then prepare for leaving.
Hope help!
