Transit Visa or Stay Permit, which do I need?

I am a nz citizen flying from SK to Cambodia with an 8 hr stopper in Nanjing and a 12hr stopper in Kunming and I want to go exploring. Applying for a visa is difficult as you have to hand it in in person and office hours are during work hours. Can anyone suggest which is better? How long will it take?

You need to apply for a stay permit when you land at Nanning.
