About:Shanghai Maglev Train

What is the best way for me to get from Pudong Airport to the French Quarter at 11:30pm?

My flight will arrive on a Thursday at 11:30pm. Will I be able to get a train at this time? Or is taxi my only option? If I do get a taxi, I'm told I should book one in advance. Where is the best place to book a taxi online?

There is no train at that time, so you can choose the taxi to each Frech Quarter directly.
Or you can take the airport shuttle bus Night Line to reach Huashan Rd (Yan'an Rd/Jing'an Temple) and then take a taxi to reach where you want. It is much cheaper.
It is a little bit difficult to take a taxi at that time, so booking a taxi online is acceptable. But I am afriad that I do not know any taxi booking online service.
I think you can ask for a pick-up service from your hotel.

Thanks so much Dora. Is the Night Line difficult to catch? Do they come regularly? That sounds preferable to a taxi to me.

Yes, it comes regularly at the airport and not difficult to catch it, so please do not worry about it.
