How to answer certain questions when filling the application form?

I am a french citizen living in Singapore and I have planned to visit in July-August.
Unfortunately, I don't know anyone there, so what can I write about the questions "Your contact"?
Also, I don't know exactly in which hotel I will stay, because I travel with a travel book and see on place which hotel I want, so what do I need to write about the questions "Residence(s) and phone number(s) during your stay" ?
If I want to go to HK, the same problem is there again...
