As for your HK trip, here is my suggestion:
May 25: In the morning, go and visit Disneyland. In the afternoon, you can go to Ngong Ping 360 and Giant Buddha.
May 26: Wong Tai Sin Temple can be visited in the morning. Then Mong Kok, China Harbor Shopping Malls, Ladies' Street, Avenue of Stars are suggested. At night, you can go to Temple Street Night Market to enjoy yourself.
May 27: Ocean Park is recommened. After that, you can go to the peak for a sightseeing and you can also visit Madame Tussauds and the peak Tower on. At night, go to Victoria Bay to enjoy the Symphony of Lights.
May 28: Sky 100 near Kowloon is suggested firstly. After that, you can go to Central Area for a visit. Afterwards, Causeway Bay is recommended to taste the local food or snacks. Oh, you can also wander the Times Square nearby. If there is time left, Stanley Market is suggested. And at night, you can enjoy yourself at the pubs or clubs at Lan Kwai Fong.
Well, if you have four whole days, it is my suggestion.

Ok, as for Macau, the Fisherman Wharf, Macau Tower, Venetian Resort, Senado Square, and Ruins of St. Pauls are all worthy destinations for one-day trip.

And as for the accommodation at HK, it is suggested to stay at Tsim Sha Tsui area, where you can find many budget hotel or hostels.
