Chinese visa for Irish national

Hi, I am an Irish national currently living in South Korea. I want to travel for 1 month in September but was told I cannot get a Chinese visa because I will have less than 6 months remaining on my Korean Alien Resident Card at the time of travel. Is it currently possible for an Irish passport holder to obtain it in Hong Kong? The embassy in Ireland have been unclear with me in their response. Thank you.
