completing application form

We are planning to book flight to china, departing on 8th May, 10pm from Sydney and arriving on 9th, 5.40 am. Is the date of first entry the 8th or 9th i should put on the visa application form?

It should be 9th May. The fact is that this date of entry if just a general reference for officers to make decision and issue visa. A single entry will be valid for 3 months after issue date, so it is not a problem at all if you apply now.
