Can I travel with different passport ?

I have to go to Hong Kong and Shanghai and I have a Lebanese and French passport. how many visas do I need ? Should I have them all together on one passport ? Can I enter Hong Kong with my French passport (no need of it) and then continue to Shanghai with my Lebanese passport (required). Do I need to do this itinerary with one passport or can I use both ?

If you are now in Lebanon, you have to apply for a L type with your Lebanese passport. If you want to visit HK on the way, the French passport may not be acceptable if there is no new exit stamp on it. So, better do this itinerary with one passport.
