Hi, you need to apply for a transit visa for HK, and the application can be lodged to Chinese embassy in your place. The documents required are your passport, application form, photo, flight ticket and your residencr card copy to Canada.

A copy of your confirmed ticket is ok, but you need to show the original for check. Form for HK visa can be downloaded online from here http://www.immd.gov.hk/en/forms/hk-visas/visit-transit.html
