I advise you to stay at Tsim Sha Tsui area. As for places to visit, you can follow this itinerary:
Day 1: Ngong Ping 360, Giant Buddha, Disneyland
Day 2: Ocean Park, the Peak, Victoria Harbour, Avenue of Stars, the Symphony of lights
Day 3: Doing some shopping and dining at, Tsim Sha Tsui, Central, and Causeway0
