Hi, your plan for the first two days is doable. And I'd like to make a little adjustment for the 3rd and 4th day's plan.
As it is easier to reach Ngong Ping from Disneyland, I suggest you go and visit Ngong Ping 360 and Giant Buddha after Disneyland travel. On the 4th day, you can go to the Ocean Park first and then wander Causeway bay, which is considered the must-see spot in HK.
I agree with you that Ocean Park is more suggested for adults.
You don't tell me your present location, so I can just provide you with the general transport to each destination.
D1: You can take the peak tram at Garden Road, Central to the peak and then walk to Madame Tussauds. After that, you can also take the peak tram to Central, from where you can take ferry to Tsim Sha Tsui which is near to Avenue of Stars and not far from Victoria Bay.
D2: You can take ferry at HK-Macau Ferry Terminal or China Ferry Terminal to Macau for travel. For the back journey, you can take a ferry to Central. Then subway Island Line can take you to Causeway Bay. Near Causeway Bay MTR Station, bus no. 40 can take you to Stanley Market.
D3: After visiting Disneyland, you can take Disney Resort Line to Sunny Bay, where you need to transfer to subway Tung Chung Line to Tung Chung Station. Walk several minutes to the cable car station. The cable car can take you to Ngong Ping 360 and Giant Buddha.
D4: Bus no. 629 near Central Station or Admiralty Station can take you to the Ocean Park directly. After visiting there, you can also take the same bus back. Then subway Island Line can take you to Causeway Bay.
