Double Entry date specifications

I am a UK citizen. I'm entering from Beijing then exiting into Hong Kong. Then re-entering (from Hong Kong) to get into Vietnam by train. I know the exact date for the first entry but am unsure of the exact dates for the others. Will crossing the border be difficult if I deviate from the specified dates?

Thanks

Don't worry, you are allowed to do this. Once you get a double entry visa (generally good for 6 months with 30-90 days duration each entry), you can use it to enter and exit anytime within its validity. The dates on the application are only reference for visa issuance.

Thank you!
We are told we will also need evidence of an exit from China, but we are going to exit on the train and cannot get tickets so far in advance. Can we explain this on the visa? OR will it be rejected?

You can explain this (your itinerary) on the application form.
