Do you mean the fast and express trains in China?
In China, there is no sleeper in high speed trains (G-train) and currently there is no direct high speed trains between these two cities.
If you want to book fast trains (K-train) and express train (T-train), I have a useful website for you at https://www.travelchinaguide.com/china-trains/, on which you can find any train timetable you want and book it on it. The hard sleeper prices on these two kinds trains are about 367 to 377 RMB for an adult.
As far as I know, there is not a lean season for Chinese train, but you need to avoid the Spring Festival period, which is the peak time for train traveling.
I hope it is useful for you.

Dear Emily,

Thank you very much. The info was very useful. I basically meant the high speed trains travelling at 300 kmph. Are they the "G" trains? so we can only book seats in them. And i can forst travel by These trains from Guangzhou to Wuhan right? Then i can catch other slower trains to shanghai.

Thank you.
